The recipe originated from a Korean lady, Eugenie. After searching in her blog, I am inspired really. I am flattered by my tasters (aka genie pigs ), I have improved! That's a piece of good news for me, I have to give credits to the easy recipes which I have found.
I bake this on Wednesday night (27 Aug) after my dinner, I can't wait till weekend to bake when I found this easy recipe. It is getting exciting, as with the humble equipments I have and the mini cakes turn out great. I am thinking to invest better equipments having to say this, I will be expecting a new set of mixer from a friend who is getting one as my birthday gift!! I am blessed. Currently, I am using the handheld mixer which handled down by my mum who loves to bake in her younger days too. Just imagine the 'antique' but reliable handheld mixer can be. It looks similar to this, the one I am using already obsolete.

And this friend requests a cheesecake for his birthday, I have agreed as a form of returning birthday gift. Though it is not my first time baking for a friend, seriously I have not bake a cake officially for a birthday. Most of the time I bake muffins (because this is only "cake" what I know about baking), indeed this is a good time for me bake a cake or prepare a non-bake cheesecake.
